Homemade Reuben bake 🧀






What is Reuben bake

Reuben Bake refers to a baked version of the classic Reuben sandwich, typically made with corned beef, Swiss cheese, sauerkraut, and Thousand Island or Russian dressing, layered between slices of rye bread. The bake variation often involves arranging these ingredients in a casserole dish or baking the sandwich itself to create a warm, cheesy, and hearty meal. It’s a comforting dish, perfect for sharing at gatherings or serving as a main meal.

For the bread:

8-10 slices of rye bread, cubed (approximately 4-5 cups)

1⁄2 cup of melted butter

For the fill-in:

1 pound corned beef cut into bite-sized pieces

1 can (16 oz) sauerkraut, drained and rinsed (optional: rinse again for a softer flavor)

2 cups of grated swiss cheese

1⁄2 cup Thousand Islands Dressing (or Reuben dressing of your choice)

2 tablespoons chopped fresh parsley (optional)

2 teaspoons carrot seeds (optional)

Preheat the oven: Preheat your oven to 350°F (175°C). Greasing a 9x13 inch rectangular baking dish.

Prepare the bread layer: In a large bowl, toss cubed rye bread with the melted butter until it is evenly coated.

Laying down the ingredients:

Spread half of the bread cubes evenly on the bottom of the prepared baking dish.

Lays the corned beef on bread cubes.

Sprinkle sauerkraut (if you’re using any) over the corned beef.

Spread half of the grated Swiss cheese on the sauerkraut.

Address the dressing and seasonings: Drizzle the Thousand Islands dressing evenly over a layer of salt. Sprinkle with chopped parsley and carwi seeds (if using).

Top with leftover ingredients: top with leftover bread cubes and grated Swiss cheese.

Baking: Bake for 30-35 minutes, or until cheese is melted and bubbly, and bread cubes are golden on top.

Serve: Let cool slightly before serving.
